butternut recipe

Purchased this butternut squash based on its appearance for painting it. It’s sort of always been a mystery to me how to cook a squash.



I finally cut it in half… the beautiful orange color. Painted it!  But then time to cook…
The true adventure begins.

Start off cubing the squash, small bite size cutes.
In a large pot coated with some olive oil, cook the squash with ½ teaspoon salt and 1 teaspoon of curry- cook a few minutes until it sticks to the bottom then add ½ cup of water.
Cover and cook.

Meanwhile… in a bowl combine green onions, 2 clove of garlic, dash of soy sauce and
5 eggs.

After the squash is cooked pour the egg mixture over and lower heat.
Stir till cooked.
